OVEN ROASTED BRUSSELS SPROUTS

 

I just love an easy meal, don't you? This is one of our favorite go-to's. You've also probably noticed that we like rice ... yep we do, with LOTS of butter, but that's another story. :)

Something you'll love about this recipe is that you only need 3 simple ingredients plus a splash of olive oil. Brussels sprouts, bacon, and an onion. That's it!
AND ... you've made a simple meal but it's still all healthy, good-for-you food. That's the best part.

Here you go.

 

OVEN ROASTED BRUSSELS SPROUTS

  • 1# Brussels Sprouts, washed and cut in 1/2

  • 1 small onion, diced

  • 1/2# Bechard Family Farm BACON, cut into pieces

  • 2 Tbsp olive oil

Preheat oven to 400°F.

Wash and cut your Brussels sprouts. I cut off a little bit of the end and then cut the sprout in 1/2.
If they're really big, I might cut them in 1/4's.

Dice your onion.

Cut your Bechard Family Farm BACON into bite-sized pieces.

Put all your ingredients onto a baking sheet with sides and sprinkle with 2 Tbsp olive oil. Stir around.
Don't use more oil than that. This is just enough oil to keep it from sticking until the bacon begins creating some grease.

Cook for about 30 minutes, stirring occasionally. You want your Brussels sprouts to soften, but don't overcook. They will get mushy.

As a main dish, 1# Brussels Sprouts serves 2 with a little left over. Or it could easily be served as a side and go further.
