Eggs

One of the easiest-and least expensive-ways of incorporating the healthful benefits of grass-fed products into your diet is to enjoy eggs from pastured hens.

Eggs have provided mankind with high-quality protein and fat-soluble vitamins for thousands of years.  Eggs provide an excellent source of special long-chain fatty acids which play a vital role in the development of the nervous system in the infant and the maintenance of  mental acuity in the adult.  That is why eggs are known as a brain food.

The cholesterol in eggs is naturally balanced with sufficient lecithin to keep the cholesterol circulating in the blood and prevent it from depositing in the arteries.  This is another instance showing the balance in whole, natural foods.

But, consumer beware!  Organic eggs almost always come from hens in confinement, even if the carton says "cage free" or "free range".  Also, factory farm laying hens & broiler chickens are fed arsenic as an appetite stimulant!  Make sure you get your eggs from pasture raised hens!

We feed our hens a custom mix of grain and organic mineral supplements to insure that you get the healthiest eggs possible.

Our eggs are available for purchase here at the farm for $2.50 a dozen and we occasionally have some with us at farmers' market.

Our eggs are also available at Mama Jean's Natural Market in Springfield, MO.

Out of consideration to this great store, we do not sell eggs in Springfield.
If you wish to purchase our eggs in Springfield, we ask you to buy them from
Mama Jean's Natural Market.

These are 2 of our laying houses.  The birds are given a "yard" to range around freely within
the safety of the electric fencing (to protect them from predators).
The laying houses and fencing are moved every few days to give the hens fresh grass and bugs.

Here are some of our laying hens on winter pasture.
They have lots of room to run around and can get lots of fresh country air and sunshine.

As you can see, family farming involves the entire family.  Even our youngest child has an important job.
Our son (in the dark shirt) felt all the more important when he got to teach his cousin how to weigh eggs.
The boys are here weighing and sorting the eggs by size.

Look at the beautiful array of colors of eggs!  Did you know ??  The color of the shell doesn't make a difference in the flavor or nutrition of the egg!  But...the way the hens are raised does!
